On October 6 on workshop “Suitability of fruit and berry varieties for different types of processed product” the leading researcher of the Institute of Horticulture Dalija Segliņa hold a lecture about the biochemical content of fruit and berries, differences between varieties and it’s suitability for different types of processed product, including historical ones. Information about basic preparation technologies of candied fruits, raw material pre-treatment, granulation equipment, drying methods and equipment, also – the quality indicators and the factors influencing candied fruits. After the lecture, the participants got acquainted with the existing processing equipment of the Institute, as well as equipment used for the production of candied fruits.
